Pearl barley or “pearled barley” is barley processed to remove its hull and bran. Before it can be consumed, its fibrous outer hull must be removed in order to eat; barley pearl includes another step, to polish and remove the bran layer.

This form of barley is the most common for human consumption and in particular is easier and faster to cook with, and is less chewy than other forms of less-processed barley.

It is cooked mainly in soups and stews, and is also an ingredient for stuffing cooked potages or sweet dishes. Pearl barley is indeed similar to wheat in its caloric, protein, vitamin and mineral content, though it differs in that some varieties are high in lysine.
